Title: Cooking Lite- Smoked-Salmon Sandwiches

Yield: 2 Servings

2ozSmoked salmon
1/3cTub-style light cream
  Cheese
1tsLemon juice
2tsChopped fresh dill
  Or 1/2 teaspoon dried dill
2tsMinced red onion
4slPumpernickel bread
1ozPer slice
4slTomato; 1/8 inch thick
8slCucumber; 1/8 inch thick

1. Combine first 3 ingredients in a food processor; process until smooth. Spoon into a bowl; stir in dill and onion.

2. Divide salmon mixture evenly between 2 bread slices; top each with 2 tomato slices, 4 cucumber slices, and 1 bread slice. Store in small zip-top bags in refrigerator.

Yield: 2 sandwiches.
